About a year ago, when quarantine first started, I kept running into this same problem. I REALLY wanted to bake cookies. With the store’s closed and everything flying off the shelves I was forced to use what I had at home. All I had was cake mix but I just really wanted to bake cookies.
Luckily for me, after doing some Pinterest diving there's actually a super simple solution. You can literally make cookies with your cake mix!! The best part is all you need is 3 ingredients:
½ a cup of vegteable oil
Now before we get to the baking, go over to the oven and set it at 350 degrees F.
The first step is to grab the cake mix you have lying around. When I did this, I had red velvet cake mix and they came out amazing. You can pretty much do it with whatever cake batter you have so vanilla, chocolate, funfetti, strawberry, carrot- grab whatever you like! All you want to do is take the cake mix of your choice and set it aside in a bowl.
For the second step, go over to your fridge to grab two eggs. I recommend cracking two eggs into a bowl and stirring them but don’t mix them into the batter just yet.
For the third step, you want to go over to your pantry and see what kind of cooking oil you have. The cake cookies work best with olive oil, but you can also use avocado oil, vegetable oil, canola oil, or any light-colored oil you have available to you. Take the oil of choice and put it in a measuring cup; you need ½ a cup of oil for this recipe.
For the fourth step, ow that you have your three ingredients, take the eggs and mix them into the batter. Once that’s mixed take the oil and do the same. Make sure you mix until there is no more visible powder from the mixture. You just want to make sure everything has been emersed in the oil and the eggs.
For fun you can also add your own toppings! When I did this, I added white chocolate chips to my red velvet mix. If you use vanilla, you can add chocolate chips or sprinkles and for chocolate mix you can add peanut butter chips or chocolate chips.
Finally, place the mixture on a baking pan with parchment paper. Bake the cookies for 10-12 minutes and then you can let them cool on a rack after for 3 minutes.
This simple three ingredient recipe is so good! Personally, I liked them better than regular cookies because they came out super fluffy and chewy. If you try this simple DIY recipe, make sure you tag us on Instagram!!
